Every try time I make these the dough is extremely sticky when I cut out the shapes. It is super hard to work with. Any tips to make it less sticky? Maybe it’s how I measure the flour? I use the classic method of scooping with a spoon into the measuring cups and leveling with a knife but maybe it’s different with milled flour?

Sounds like you need more flour. I never have had sticky dough. I just scoop the flour into my measuring cup, no spooning.
