What donut mold do you use? I am trying to find something that isn’t non-stick and having a hard time.

I've not tried gelatin in place of protein powder but I don't think it acts the same in recipes. My favorite protein powder is linked at the top of the app under "favorites and links'

Our school is nut free - what is a good alternative to the almond flour, and also where you have cashew or almond butter in recipes, is normal butter an okay substitute?

Have you ever tried sun butter? It’s sunflowers so it specifically says nut free on the jar. I think it could be a good sub!

I can't say I would recommend subbing regular butter for nut butters - I don't know what it would do to the texture or flavor.

Is unflavored protein powder also unsweetened? I'm not sure I have that in my pantry. Where do you find it?

Yes it's unsweetened. It just adds protein without imparting flavor. I like equip protein unflavored.
