The brioche bread is very very delicious but it did not rise as much as it should. I followed all the steps. I wonder if the type of yeast I use is not right. I use Lallemand Instaferm dry yeast. What else can make the bread not rise properly?

Make sure it’s instant yeast. Was your flour milled finely?

Yes, pretty fine. If the flour is not fine milled it can cause less or no rise? . This is the yeast that I used.

Yes if the flour is too coarse it won't rise properly. Also could be a lack of gluten development during kneading

Why are we refrigerating overnight? Can we skip that step and bake the same day?

The refrigeration helps with several things. 1) brioche dough has extra butter, so refrigerating helps it to be easier to work with and not so sticky. 2) the slow fermentation enhances the flavor. You can skip the refrigeration but it will impact the end result.
