Would this be a good alternative for crescent rolls? We always do pigs in a blanket for Christmas Eve. Thinking if I roll it out and cut into triangles, it would be yummy.

I purchased wheat berries from Azure Standard. I have a KitchenAid mixer. I have an attachment to my mixer for grinding the berries.i have ground the berries theee times down to the fine setting I’m wondering if I should bloom the yeast separately.

That’s your problem. The KA attachment doesn’t get the flour fine enough. It always produces bricks. It’s best to save up for a real mill

That’s ok. We wanted to make sure we liked the flavor of the bread before a huge investment into a grinder. Yes we like the flavor so will be saving to purchase a better grinder but they are a lot of money

Makes total sense! I don’t blame you. For now, you can sift out some of the larger pieces of bran that the KA attachment gives you in the flour. You will lose some nutrients that way, but it’s still way better than store bought and will give you much better results :)

Chiming in here real quick - I have the ankarsrum mixer attachment for grinding flour. Do you have any familiarity with how this works? I’m making my first rolls today. The dough rose just fine, but I’m wondering how the texture is going to be.

Would love to hear your thoughts if you do. They turned out great, very soft and fluffy. I wouldn’t say they were gritty, but at the same time, I can tell it’s freshly milled. It’s not as fine as regular flour. Not sure if that’s normal or not.

So glad to hear they turned out well! I spoke with ankarsrum and they said the mill is for hot cereals, beans, and coffee - not designed for grains, so I won't be trying it. The flour from a nutrimill is very fine, but you can definitely notice the pieces of bran in it, but should be light and fluffy, similar to white flour.

Oh my goodness!!!! I can’t believe that since they market it as a grain mill. That was not cheap and now I am NOT happy. Obviously not mad at you, but they will be hearing from me lol. I guess I’ll keep using it since it worked ok…?? Ugh.
