Farmhouse Skillet Pancake

I LOVE Dutch babies! We made these all the time when I was a kid. Love that my kids love them and they are packed with protein. I’ve always cooked mine in a glass pie dish and it bakes perfectly, flat on the bottom and high on the sides. Anytime I bake it in a cast iron, the entire thing is a massive bubble! It falls once it comes out of the oven. Still is so yummy though!

Very good! The family absolutely loved it, and this recipe is officially a keeper. I had to improvise a bit, but everything still turned out great. I used blanched almond flour as a gluten-free alternative, and it worked beautifully. It actually turned out to be more like a pancake quiche, and we loved it! I was also out of vanilla, so I swapped for almond extract instead, and it added such a nice flavor. I’m currently saving up for my own flour mill, but until then, this recipe is definitely staying in my rotation. Highly recommend!

Wow! Love how you made it your own and worked with what you had! I've made it with my gluten free flour blend (in my gluten-free bundle) and it worked out beautifully! Great to know that it works with almond flour too!
