I learned they expand a lot! I used spelt and cane sugar.... I wonder if they would be thicker as a whole if I used coconut sugar instead and the other flour? I used spelt for the less gluten content.

I think the cane sugar might've been your issue here. Ot calls for brown sugar or coconut sugar
