So my son have to be as gluten free as possible so we are using Einkorn flour. We just started milling so newbie here! Can I just use Einkorn in place of the hard, soft, etc in recipes? Thanks so much!

Hi! That's a great question - Einkorn is a trickier grain to work with because of the delicate gluten structure. You can use it in any recipes that calls for 'soft wheat' but it won't work for most yeasted recipes that use hard wheat
