Can you prep these into rolls and then put in the fridge overnight and bake in the morning?

These are AMAZING!! My family devoured them and I feel good about them getting the nutrients of the fresh milled flour. I’ll be keeping this recipe for Christmas Eve morning for my family.

Kristin, do you have any tips anywhere on substituting einkorn berries for red/white berries? We’re slowly reintroducing wheat after being gluten free for a while and are going to start with einkorn, but I know it’s stickier and different to work with. These recipes look amazing, and I’m wondering if you think they’d work with einkorn.

Hi! I don't have any resources on that because honestly my experience has been poor. I LOVE einkorn in quick breads, but yeasted breads it is a sticky mess because of the low gluten content.

Thank you so much for letting me know! Maybe I’ll just try einkorn in the quick breads and try kamut or spelt in the others as we’re getting back into milling.

Any chance I can use store bought flour for these? I haven’t gotten a grain mill yet.

One pan has icing, the other does not. These are amazing! They taste like an apple pie and cinnamon rolls had a baby.
