Would this be okay to make a day or two ahead of time?

Is it usually somewhat crumbly? I’ve made this twice now, and it’s delicious, but crumbly. It comes together nicely in the food processor, feels and looks like pie crust should, but after I chill it, it’s rather crumbly.

Is your flour milled nice and fine? I'd says it's more crumbly than a store-bought crust with all the hydrogenated oils and such, but it should be easy to work with

It’s decently fine, but I’ll give getting it finer a try.

I’ve noticed that when I grind soft wheat berries, I can’t get them as fine in my nutrimill as I can hard wheat berries. I can get hard wheat fairly fine, but if I try to grind soft wheat on the same setting, the flour stops coming out and I have to adjust it to courser for it to start coming out again. How do I get a finer grind with soft wheat?

I'm not sure why it wouldn't get them as fine. I always turn it as far as it will go to get the finest grind possible for all wheat berries.
