Hi there. Quick question. Ingredients for 2 loafs calls for 12 cups of flour. Step 1 says to add 5 cups, step 2 says to add remaining 1 cup. Thanks!

That's because the method/directions don't change when you change the servings or amounts made. So add 10 cups and then 2 cups later. Just follow the directions, but doubled

I recently found a source for black einkorn whet berries. I tried this recipe with them and the bread is ABSOLUTELY delicious. The bread turned out dense and moist. I am sensitive to gluten and yeast but didn’t have any reaction after eating this bread! Definitely going to be baking this bread again and again.
