Do you have any suggestions on doing this as a make ahead recipe for Christmas morning? Is there a step I could make it up to and then put it in the fridge overnight? Or would you just bake it and reheat it in the morning?

Yes you can refrigerate it before the final rise. The refrigeration should slow the rise, but still allow it to rise.

I would like to mill, I have an attachment for my kitchenaid. I’m just not sure what is the best to buy to mill.

You can try the KA attachment but I'll warn you, it doesn't mill fine enough and the breads will be dense and crumbly. But i'd recommend https://www.ancientgrains.com/?a_aid=generationacres hard white wheat from ancient grains to start with!
