We tried arrowroot powder instead of cornstarch, but when it's mixed with dairy it turns weird and slimy. Not ideal. So no, I don't know of a good substitute.

There are dry coconut, soy or almond milk powders out there. Maybe one of them could work for you. I am personally going to try the coconut. I use coconut milk for almost all my milk needs.
