This recipe was quick and easy but my buns turned out pretty dense not fluffy. I used fine milled hard white wheat. Do you happen to know what I may have done wrong?

Most likely a kneading issue. Did you knead to windowpane?

Made these today for burgers later this week and they turned out so good! I may have eaten one for testing purposes 😂 I used my kitchen aid for kneading and it took about 10-15 minutes to reach windowpane! Just wanted to mention for those who have a kitchen aid

Was there a typo in this recipe? Was I supposed to add the yeast with the warm water? And then add the rest later? I feel like they’re not rising because of that and I followed the recipe exactly.

No typo. This is the right way to do it. Unless you are using active yeast that needs to be activated first

Do you use a dough hook to mix and knead or the open paddle? I’m using a kitchen aid.

I don't use a KA for bread because I don't like the result. But if I had to, I would mix with the paddle and knead by hand

Possibly used too much flour? Or didn't get to windowpane during kneading

I only have soft white or hard red wheat. Would either or a combo of those still work for this recipe?

hard red will work but it will be a denser burger bun with a richer flavor. Which is okay! Just know that going into it :)
