I made this but it is so dense. I used all hard white wheat berries and honey in place of maple syrup those were only substitutes I made. But the bread did not raise much. I even tried extending the raise times to account for my home being colder.

Hi! Do you ever have issues with other breads not rising? What kind of mill do you have? Is your flour nice and fine? What kind of yeast?

I am using red star active yeast. I have not had problems with bread rising in the past. The wheat is Augason farms. It seems pretty fine. I did not sift the bran out

Flour looks good. The active yeast is likely the problem, this recipe (and all my yeasted recipes) calls for instant yeast. If you use active yeast, you need to activate it first, then add it.
