Yes you can reduce the honey. The honey is a liquid so if you reduce the liquid then you will also need to reduce the flour slightly

I've made this twice now and both times it's come out gummy and very heavy. It doesn't stay together well when cutting it. It also falls and dips down in the top center. I am new to FMF. My bread machine is the KBS and I'm using the whole wheat setting. What are your recommendations?

Mockmill 200 and I've used 100% all hard white (Azure or Palouse) - I recalibrated it yesterday (which made the grain finer) and tried this recipe again with 30/70 hard white and hard red and it turned out better! I'll keep trying!

Mine did the same thing rising too high and burning on top! A little too crispy on the outside edges too! The inside tasted really good though. Not exactly sure what went wrong either!

With the Nereteva, how “much” would you bake for? Would it be the typical recipe for 10 as it appears when you first pull up the recipe or should I lower the amount to fit? My bread maker has a setting or 750g or 1000g and I’m worried this may be too much for the 1000g. Thanks!!

Sorry I didn’t really know how to type it out. Essentially I was worried your recipe was too much for my bread maker (comparing ingredient amounts from your recipe to the one they gave me in the bread maker guide) and would overflow or something, but after doing it I realized there is plenty of space and it should work out fine. Sorry that was confusing!

Definitely need the instant yeast for this recipe. As far as it falling in the middle, that is an indication that it rose to high during the final rise. You could play around with different settings and see if another one is better. But whole wheat works great for mine everytime.
