Can I sub a different type of flour if I don't have fresh milled? I have all purpose or just gluten free etc.

Thank you! Id looked up conversions and figured it out. They turned out good. I just need to actually get maple sugar next time. I used date sugar which is supposed to be comparable but they weren't very sweet. Lol
